LION'S MANE & GINGER BURGERS

2 tbsp olive oil 1 clove garlic, minced 1 tbsp fresh ginger, minced 1 lb fresh Lion’s Mane mushrooms, diced 1-2 tbsp soy sauce 1 lb ground turkey or vegan substitute Sauté garlic in olive oil until lightly browned over medium heat, do not burn. Add ginger and allow flavors to combine for one minute before adding diced Lion’s Mane mushrooms. Continue to cook for 10 minutes, remove from heat and cool for 5 minutes. In a large bowl, add soy sauce to ground turkey/vegan substitute. Add the sautéed mushroom, garlic, and ginger and mix well. Form into patties and pan fry, grill, or broil. 2-4 servings
